Calling all Old Bay lovers! Today I’m sharing Darian’s favorite recipe that I cook fairly often. These baked salmon cakes are packed with flavor and are ready in less than 30 minutes. They do contain bread crumbs and mayo, so they’re not perfectly healthy, but baking them rather than frying them makes them a bit healthier. Baked Salmon Cakes

2 (6 oz) cans skinless and boneless salmon
2 eggs
1 green pepper, diced
2 TBSP mayonnaise
3/4 cup panko bread crumbs
2 tsp Old Bay seasoning
Directions
- Preheat the oven to 400 degrees.
- Cover a large sheet pan with aluminum foil for easy cleanup. Spray with cooking spray and set aside.
- In a large bowl, mix together all the ingredients until well combined.
- Form 6 large patties with the salmon mixture and place them on the baking sheet you set aside earlier.
- Bake for 8 minutes, then remove the sheet from the oven and flip the salmon cakes.
- Return the salmon cakes to the oven and bake for an additional 5 minutes.
- Remove from oven and enjoy!
I make a variation of these too and they’re so yummy and easy! We use Italian breadcrumbs and grated Romano cheese though, so I’ll definitely have to try it with Old Bay.
